How to Get a Super Hero to Eat Their Oatmeal!

Want to know how to get a super hero to eat his/her oatmeal?  BAKE IT!  That's right...i have discovered baked oatmeal and its delicious!  The boys and Emily actually ate all their oatmeal and I did too!  I thought I would share the recipe I used...

Baked Oatmeal:
3 cups oats or quick oats
2 tsp. baking powder
1 tsp. salt
1/2 tsp. cinnamon
1/2 cup brown sugar
1/2 cup coconut
1/4 cup oil
2 eggs
1/2 cup applesauce
1 cup milk
1/2 cup chocolate chips (I may have added more than this...just guessing!)
Mix all ingredients together and pour into a greased 8 inch baking dish.  Bake at 350 degrees for 30 minutes. (I made it up last night and refrigerated it so I just had to pop it in the oven!)

Try it for yourselves and let me know what you think!  I'm sure you won't be disappointed and your little super hero's won't be either!!!

Things I love...

For those of you who don't know much about me, I love to cook and entertain.  Birthday Parties for my kids are my favorite of course...over the past 8 years I've done about every super hero and sports theme imaginable.  A few years ago, I even started having coffee for my friends once a week so I could try out new breakfast and brunch recipes!
Recently, I hosted a baby shower for my sister-in-law, Monica, and my new nephew Tyler!  It was so much fun!  Baking is one of my favorite things to do so I made a variety of sweet treats for all the guests including, Blueberry and Cherry Mini Cheesecakes, Red Velvet Cake Pops, Raspberry Cream-cheese Cupcakes, and Peanut Butter Cups!  They were a hit...and I'm still getting asked for recipes!  Here are some pictures of the finished product!





Who knows, maybe one day I can make a job out of it!  Well, I better go...I have a birthday party to plan for!  :)

Birthday Parties, Sleep-overs, football, and a baptism!

What a busy weekend!  Friday night Cole celebrated his "Friend Birthday" by having 4 classmates over for car races and a sleep-over!  Let's just say there was lots of giggling, running, and eating...but we survived!  It was fun to see the excitement in their eyes when the cars were racing and of course wrecking!  Cole had a blast and they were so tired from the car races that they didn't keep Brian and I up all night!  My Grandma stayed home with Emily and Jackson slept over at his cousin Brecken's!  Exciting night all the way around!  Emily loves Grandma B. and looked forward to her coming all week!


The next morning i made 21 pancakes and 20 sausages...which they devoured, and then we took all the boys home!  After a quick clean-up and trip to Brian's mom's for lunch, my brother and sister-in-law and my niece and nephew came over for the first Husker game of the season!  We won of course...and the jalapeno poppers and puppy chow topped it off!  Thanks Karlette!

Sunday, we celebrated the baptism of our nephew Tyler and then Cole was off to another birthday party/sleep-over!  Brian felt bad that Jackson and Emily were left out so we took them to eat Taco's and shop at Toys R Us!  What an awesome daddy!  Today, was beautiful so we biked to the park and came home for lunch with Daddy!  This is such a treat...the kids get so excited when we can all eat lunch and supper together!  My parents just got back from Branson, MO, so they came for supper tonight...and brought the kids some souvenirs!


I love weekends like this but hate to see them end!  Looking forward to next weekend...Cole's official 8th birthday!  Where has the time gone?  I can't be old enough to have an 8 year old, can I?!?!?!?!

Show and Tell

Today Jackson has show and tell...I thought it would be exciting!  I had no idea how stressful it would be!  Jack needed to bring something red.  I thought it would be easy considering he's my super hero kid.  Spiderman, Captain America, you name it, we have it!  First I suggest captain america's shield...nope it has gray on it.  Next, I suggest Spiderman...nope it has blue on it.  I tell Jackson I'm sure his object does not have to be solid red but he's not convinced.  Here come the water works...oh my!  How bout we eat breakfast?  No not hungry.  Oh my this is gonna be a morning!  Finally, I just stick the captain america shield in his backpack and tell him this is what he's going to take!  Hope this works...not looking forward to next week!  Who knew the life of a kindergartner could be so stressful!
Well, gotta go, my little Emily is taking all my tupperware out of the cupboard and trying to open up the fridge!

What to do?

Well, it's been 8 years since I started staying home to raise a family.  Now 3 kids later,  I'm looking for something different to do.  I think I'll start a blog...it just seems like the thing to do!  Both of my boys are in school now...Cole is a second grader, and Jackson is in Kindergarten...so it's just me and my little lady at home. Boy is it quiet!  I've noticed that I learn the most about raising kids from my mom and other moms...so maybe my stories can help someone else (or at least make them smile)!  So...here goes...my newest adventure!
